This easy, brunch-friendly recipe will only take 20 minutes of your time. This omelette is made with 3 eggs, 2 cups of diced pumpkin, chives and seasoned with sesame seeds and cooking wine. You can even dip the omelette in soy sauce to bring out the sweetness of the pumpkin!

Pumpkin, Beef and Black Bean Chili

What’s fall without hearty meals? This recipe uses 1 and a quarter pound of ground beef, 3 cups of pumpkin, a can of black beans and several spices and aromatics. 

In a large dutch oven, start by cooking the ground beef until it’s no longer pink, then strain it and saute the rest of your vegetables and aromatics in the beef drippings. Add your pumpkin, beans, and broth and bring it all to a boil. Once boiling, add the cooked ground beef back and reduce the heat and simmer the chili for approximately 20 minutes or until the pumpkin is tender. Serve it with chipotle sour cream with lime zest and juice.

Vegan Pumpkin Smoothie 

Early September is still considerably warm for fall, so to fight the late heatwave, try this vegan pumpkin pie smoothie! It’s healthy, low-carb and easy to make! All you need is pumpkin puree, avocado, your choice of non-dairy milk, maple syrup, vanilla and pumpkin pie spice! Blend it all with ice (or freeze the avocados beforehand if you don’t want to use ice) and serve with whipped coconut cream.
