An incentive to eat well is something most of us can’t turn down. Winterlicous is a chance to explore new restaurants in Toronto, a world-distinguished hub for diverse and remarkable food. The vast range of restaurants taking part in Winterlicous offers three-course Prix fixed menu’s that will allow your taste buds to explore some of the cities most raved about spots.

HOLR visited a savory spot on the list, Northern Maverick Brewing Company.

We started off with a flight of beers, all of the four options which we let our server curate.

The two of us who are both fond of beer, were especially excited to try the ranging variety and had something pleasant to say about each one. Even if it wasn’t a beer we would be quick to order, the aromas in each offered a unique finish that could convert a lager drinker to a stout afficianado, or an IPA adversed palette to a lover of hops. I was sold on the Oatmeal Stout which had a smooth finish due to its aromas of chocolate and coffee.

Kale Chard Salad

Baby Kale, Housemade Bacon, Roasted Garlic Dressing

Winter Squash and Pumpkin Soup

Roasted Squash, Roasted Pumpkin, Cinnamon Whipped Cream

The Kale and Chard Salad was a much-appreciated twist on a classic caesar salad.

A perfect addition to a winter-themed menu, the winter squash and pumpkin soup would make a wonderful permanent addition on this menu.

 

Beastly Burger

Dry-Aged House-Ground Chuck, Braised Beef Brisket, House Smoked Cheese, Chipotle BBQ Sauce, Kale

Pumpkin Scallop Risotto

Pearl Barley ‘Risotto’, Roasted Pumpkin Puree, Two Seared Atlantic Scallops, Toasted Pumpkin Seeds

 

A unique take on risotto, perfectly portioned and delicate in taste.

The Beastly Burger was “something you have to get when you come here” according to our server, and now us.

And for dessert, we indulged in the Upside-down Apple Pie (Maple Soft Serve Ice Cream, Apple Pie Filling, Cinnamon Sugar Pastry Crisp).

 

Wrapping the amazing food experience with a tour of the brewery that is exposed in the restaurant served as the perfect explanation to an establishment that noticeably focused on the specific flavours in every dish. This was especially demonstrated with the beer that was fermenting in large wooden barrels which previously stored specially aged rum or premium bourbon, creating a limited batch of irresistible beers.
