Toronto gets swooned with a taste of Italy at the Ritz-Carlton’s TOCA restaurant. TOCA, in collaboration with Italy’s admired restauranteurs, Chef Oliver Glowig, brings us fresh, authentic ingredients from the regions of Italy, creating classic dishes with a modern twist to keep our taste buds on their toes.

In honour of this partnership, TOCA and Chef Glowig created a special menu, consisting of fresh seasonal ingredients from  Capri regions in Italy, in a delicate dishes with exploding, soothing, and particular tastes.

And as any fine dining experience before we begin, a note from Chef Glowig:

” I am always excited to return to Toronto to work with the TOCA team at The Ritz-Carlton, Toronto. This was a special dinner menu that I created to highlight some new dishes that I have at created for my new Italian Ristorante, Locanda Petreja at Borgo Petroro in the Umbria region of Italy. It is the first time that guests in Canada could try this new cuisine and I am interested in knowing what our guests think of the different flavours. Due to being a landlocked area of Italy, we use more truffles, meats: beef and even duck & pigeon, and legumes: lentils and chickpeas, than for example, where I used to be located in the coastal area of Capri, where we had access to fresh fish every day and were in the green heart of Italy that has delicious tomatoes, basil, zucchini and Buffalo Mozzarella. I am happy to be able to create unique dishes for our guests to try that use traditional cooking with new innovative techniques and highlighting local flavours.”
